
Assistant Director of Fast Casual Restaurants
The Assistant Director of Fast Casual Restaurants is responsible for the successful oversight and operational excellence of five fast casual outlets: Filo’s, Ralph’s, Viola & Dot’s, Miss Tilly’s, and The Tack Room. This role ensures high-quality service, financial performance, guest satisfaction, and team leadership across all outlets. The ideal candidate demonstrates exceptional food & beverage knowledge, leadership ability, and the capacity to drive innovation and accountability in a high-volume, resort-style environment.
Essential Functions:
- Oversee day-to-day operations for five fast casual restaurants, ensuring operational consistency, efficiency, and service excellence.
- Support and develop outlet Leads and Supervisors through coaching, training, and performance management.
- Monitor sales trends, labor management, food cost control, and departmental budgets to drive profitability.
- Partner with the culinary and beverage teams to support menu execution, specials, and promotional rollouts.
- Actively participate in hiring, onboarding, and team development to build strong, service-oriented teams.
- Lead training initiatives to ensure team members follow standard operating procedures, food safety practices, and hospitality standards.
- Implement and uphold appearance, cleanliness, and guest service standards across all locations.
- Conduct regular outlet audits and inspections to maintain quality and operational consistency.
- Coordinate and support resort-wide initiatives, events, or seasonal promotions as they relate to assigned outlets.
- Manage interdepartmental communication between culinary, beverage, marketing, and facilities teams.
- Assist in scheduling, payroll management, and compliance with resort policies and state/federal labor regulations.
- Serve as a visible leader during peak service times and large events, modeling ideal guest interaction and service recovery.
- Foster a positive, inclusive work culture that promotes teamwork, accountability, and growth.
Qualifications:
- Minimum of 3 years in a multi-outlet food & beverage management role; fast casual or high-volume
- resort experience preferred.
- Proven success in leading large teams with multiple reporting layers.
- Strong financial acumen with experience managing budgets, labor, and food costs.
- Excellent communication and interpersonal skills; bilingual abilities a plus.
- Deep knowledge of food safety regulations, service standards, and hospitality best practices.
- Proficiency in POS systems, scheduling software, and Microsoft Office Suite.
- Flexible availability including evenings, weekends, and holidays as business demands.
Physical Requirements:
- Ability to stand and walk for extended periods.
- May be required to lift up to 40 lbs.
- Must be able to navigate a large resort campus, including indoor and outdoor environments.
