Pastry Cook l | Emma's Equestrian Manor
Pastry Cook l is a senior-level production role responsible for leading the preparation and execution of high-volume pastry items for Emma’s, banquets, catering, and special events. This role requires advanced pastry skills, strong organizational ability, and leadership in a fast-paced, deadline-driven environment.
Primary Responsibilities:
- Lead daily production of high-volume pastry items for banquets, catering, and special events, ensuring consistency, quality, and presentation.
- Execute advanced pastry techniques for baking, finishing, decorating, and plating with precision and artistry.
- Prepare and plate high-end desserts during service, maintaining mise en place and readiness throughout service periods.
- Collaborate with banquet chefs, event planners, and restaurant leadership to meet production timelines and service standards.
- Assist with recipe development, seasonal product innovation, and refinement of existing offerings.
- Train and mentor junior pastry team members across banquet, boutique, and restaurant pastry operations.
- Maintain prep schedules, production logs, and ensure timely execution of daily and event-specific goals.
- Monitor product quality, enforce kitchen standards, and uphold presentation consistency across all pastry outputs.
- Support inventory tracking, ordering, and receiving to ensure ingredient availability and minimize waste.
- Ensure full compliance with food safety, sanitation, and ServSafe protocols across all pastry workstations.

Qualifications, Education, Experience, Skills and Abilities
- 4+ years of professional pastry experience, with a focus on banquet or high-volume production.
- Strong knowledge of pastry fundamentals and large-scale execution.
- ServSafe Certification required.
- Culinary or pastry degrees are preferred.
